Pork Tenderloin with Black Bean Salsa

The key to a really good pork tenderloin is in the marinade, and our recipe for Pork Tenderloin with Black Bean Salsa has a great one! When you serve the pork with our easy black bean salsa, you'll have a healthy change-of-pace dinner that your taste buds will love.
What You'll Need
- 1/4 cup olive oil
- 1/2 cup lime juice
- 4 clove garlic, minced
- 1/2 cup plus 2 tablespoons chopped fresh cilantro, divided
- 1 teaspoon ground cumin
- 1 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 2 pork tenderloins (1-1/2 to 2 pounds total)
- 1 (15-ounce) can black beans, rinsed and drained
- 1 1/2 cup fresh salsa
What to Do
- In a large resealable plastic bag, combine oil, lime juice, garlic, 1/2 cup cilantro, the cumin, 1 teaspoon salt, and the pepper. Add pork; marinate in refrigerator 1 hour.
- Meanwhile, in a medium bowl, combine black beans, salsa, the remaining cilantro, and the remaining salt; mix well. Refrigerate until ready to serve.
- Preheat oven to 350 degrees F. Place tenderloin on baking sheet, discard excess marinade.
- Bake 25-30 minutes, or until desired doneness. Slice and serve with black bean salsa.
Notes
- Did You Know? Pork tenderloin and pork loin are different cuts of meat, and they don't look anything alike. The tenderloin is a lot smaller and can be cooked quickly over high heat, or in the oven (like we did in this recipe!).
