What You'll Need
- 4 tablespoon peanut oil, divided
- 2 eggs, lightly beaten
- 1/2 pound cooked boneless pork loin, cut into small pieces
- 3 clove garlic, minced
- 4 cup cooked cold rice
- 1 cup frozen peas, thawed
- 1/4 cup soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 scallions, thinly sliced
What to Do
- In a large skillet over high heat, heat 1 tablespoon oil until hot. Add eggs and stir to scramble 1 to 2 minutes or until fluffy, then remove from skillet; set aside.
- Add remaining oil to the skillet and heat until hot. Stir in pork and garlic and stir fry 2 minutes.
- Add rice and cook for an additional 3 to 4 minutes or until rice is heated through.
- Return scrambled eggs to the skillet along with peas, soy sauce, salt and pepper, and scallions. Cook 3 to 4 minutes or until heated through. Serve immediately.
