Baked Mashed Potatoes

This hearty dish is the perfect side for any Sunday dinner. When you're expecting a big bunch, you'd better make an extra batch 'cause they go quickly!
What You'll Need
- 6 potatoes, peeled and cut into 1/4-inch slices
- 1/2 cup Italian-flavored bread crumbs
- 1/2 cup (1 stick) butter, softened
- 1/4 cup sour cream
- 2 eggs, beaten
- 2 tablespoon chopped fresh parsley
- 1 1/4 teaspoon salt
- 1/2 teaspoon black pepper
What to Do

Preheat oven to 450 degrees F. Coat a large baking sheet with cooking spray.

Place potatoes in a soup pot and add just enough water to cover them. Bring to a boil over high heat and boil 12 to 15 minutes, or until fork-tender; drain and place in a large bowl.

Mash potatoes slightly and add remaining ingredients; mix well. Shape into 12 balls and place on baking sheet.
- Bake 15 to 18 minutes, or until light golden.
Notes
Make these your own by mixing finely chopped onions, garlic, or even shredded cheese into the potato mixture before baking.
