Garlic Roasted Potatoes

These are one better than just regular baked potatoes because they are more homemade tasting!

What You'll Need

  • 2 1/2 to 3 pounds small potatoes, rinsed and quartered (skins on)
  • 1/4 cup olive oil
  • 1 head garlic, sliced in half crosswise and separated
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

What to Do

  1. Preheat oven to 450°F.

  2. Place potatoes in a 9 x 13-inch baking dish. Cover the potatoes with the oil, garlic, salt, and pepper; mix to coat potatoes.

  3. Bake for 50 to 60 minutes, turning occasionally, until golden brown.

  4. Discard garlic before serving.

Notes

This works just as well with regular-sized potatoes as it does with the little creamer type. Just cut them into large chunks.
