Red Pepper Pilaf

When it comes to adding color to a recipe, red bell pepper is tops! It makes this a perfect side dish for Valentine's Day, Christmas or anytime you're in a festive mood!

What You'll Need

  • 1 tablespoon butter
  • 1 cup long- or whole-grain rice
  • 1 onion, finely chopped
  • 1 3/4 cup chicken broth
  • 1/4 cup water
  • 1/2 of a red bell pepper, finely chopped

What to Do

  1. In a large skillet, melt butter over high heat. Add 1/2 cup rice and brown, stirring constantly. Add remaining rice, onion, chicken broth, and water and bring to a boil.
     
  2. Reduce heat to medium-low, cover, and simmer 15 minutes. Stir in red pepper and cook until heated through.
