Sweet Potato Salad

The sweet potato is the gem of the South, and this Southern-inspired potato salad starts with sweet potatoes and ends up as the star of the picnic line-up. Its certainly a refreshing change-of-pace potato salad for any time of year.
What You'll Need
- 5 sweet potatoes (about 2 pounds), peeled and cut into 1-inch chunks
- 1 cup mayonnaise
- 1/4 cup honey
- 1 tablespoon yellow mustard
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/4 teaspoon salt
What to Do
- Place potatoes in a large saucepan and add just enough water to cover. Bring to a boil over high heat and let boil 12 to 15 minutes, or until fork-tender; drain.
- In a large bowl, combine remaining ingredients; mix well. Add sweet potatoes and mix until well coated. Cover and chill for at least 2 hours before serving.
