In Spanish, flauta means flute or flute-shaped. Here it refers to a Mexican roll-up worthy of a grand "Olé!"

What You'll Need

  • 1 can (16 ounces) refried beans
  • 1 can (4 ounces) chopped green chilies, drained
  • 1/2 a small onion, chopped
  • 1 cup (4 ounces) shredded Cheddar cheese
  • 1/4 cup chopped toasted almonds
  • 1 tablespoon dried cilantro
  • 8 eight-inch flour tortillas
  • 2 tablespoon vegetable oil, divided

What to Do

  1. Preheat the oven to 425 degree F.

  2. In a large skillet, combine the beans, chilies, onion, cheese, almonds, and cilantro over medium heat. Cook for 3 to 5 minutes, or until the mixture is hot and the cheese is melted.

  3. Spoon the bean mixture evenly into the center of each tortilla and roll tightly to close, forming a flute shape. Place seam side down on a large rimmed baking sheet.

  4. Use 1 tablespoon of the oil to brush the tops of the tortillas; bake for 16 to 18 minutes, or until golden, brushing with the remaining tablespoon of oil halfway through the baking. Serve immediately.

Notes

Serve topped with picante sauce, if desired.
