Garden Burritos

Fresh-from-the garden flavor, with fresh-from-the garden ingredients, makes for an easy way to get your family to eat their vegetables.
What You'll Need
- 1 package (6 ounces) alfalfa sprouts
- 2 large ripe tomatoes, chopped
- 1 large cucumber, peeled and chopped
- 8 ten-inch flour tortillas
- 1/2 cup sour cream
- 1/2 cup salsa
What to Do
- Lay the tortillas on a flat surface.
- Divide the alfalfa sprouts, tomatoes and cucumbers evenly in the center of each tortilla.
- In a small bowl, combine the sour cream and salsa; mix well. Dollop the mixture evenly over the vegetables.
- Fold the bottom of each tortilla up over the vegetable mixture, then both sides over, envelope fashion. Fold the top closed and turn the seam sides down. Serve immediately, or cover and chill until ready to serve.
Notes
Sometimes I feel like adding roasted peppers or slices of jalapeño peppers for a little variety.
