For a quick and easy lunch or dinner, try our baked sandwich recipe for Open Faced Chicken Oscar. This sandwich is made from shortcut ingredients that you probably already have on hand, so it's a great throw-together meal. Add a salad or soup, and you've got a complete meal!
What You'll Need
- 1/4 cup mayonnaise
- 1/8 teaspoon black pepper
- 1 (10-ounce) can chunk-style chicken, drained and flaked
- 4 slices white or wheat bread, toasted
- 1 1/3 cup frozen asparagus cuts (from a 10-ounce package), thawed and drained
- 4 slices Swiss cheese
What to Do
- Preheat the oven to 400 degrees F. In a small bowl, combine the mayonnaise and pepper, then add the shredded chicken.
- Place the 4 slices of toast on a cookie sheet. Top each slice of toasted bread with a 1/2 cup of the chicken mixture, then top with 1/3 cup of asparagus cuts, and cover with a slice of cheese.
- Bake for 5 to 8 minutes or until the sandwiches are heated through and the cheese is melted.
Notes
You don't have to use Swiss cheese if you prefer another kind. Use your favorite.
