Our Coconut Strawberries are a great garnish for plates of finger sandwiches, or even for fancying up our cookie and other dessert trays!
What You'll Need
- 1 (14-ounce) can sweetened condensed milk
- 1 (14-ounce) package shredded coconut
- 2 (4-serving-size) packages strawberry-flavored gelatin, divided
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 2 tablespoon slivered almonds
- 1/8 teaspoon green food color
What to Do
-
In a medium bowl, combine sweetened condensed milk, coconut, 1 package gelatin mix, the sugar, and vanilla; mix well. Pour second package of gelatin into a shallow dish. Form coconut mixture into 1-inch balls and roll in gelatin until completely coated; set aside.
-
In a small bowl, combine slivered almonds and food color until almonds turn green. Holding each coconut ball with the tips of your fingers, press a green almond in the top of each ball, forming a strawberry stem.
-
Use your fingers to form each ball into the shape of a strawberry. Place on a baking sheet and allow to dry at least 1 hour. Serve, or cover until ready to serve.
Notes
For a great gift idea, save plastic strawberry containers from your strawberries. Fill the containers with these, cover with plastic wrap (maybe even the pretty colored ones), and tie each package with a pretty ribbon.
