Parmesan Artichoke Crostini

Crostini is one of those fancy dishes we only really serve up when we're expecting company. And if you're looking for a crostini recipe that'll really impress everyone, you'll want to try this Parmesan Artichoke Crostini recipe. Even though it looks fancy, it uses everyday ingredients that everyone loves, so you know that the whole plate will be gobbled up in no time!
What You'll Need
- 1 (14-ounce) can artichoke hearts, drained and chopped
- 1 (4.5-ounce) can chopped green chilies, drained
- 2 cloves garlic, minced
- 1 cup light mayonnaise
- 1 cup grated Parmesan cheese
- 40 baguette slices, toasted (see note)
What to Do
- Preheat the oven to 400 degrees. Stir together first 5 ingredients in a medium bowl. Spread 1 tablespoon mixture on each bread slice, and place on ungreased baking sheets.
- Bake 3 to 5 minutes or until thoroughly heated; serve immediately.
Notes
For ease, buy toasted baguette slices in the grocery store bakery rather than toasting your own. If you have leftovers of the Parmesan-Artichoke mixture, use it as a topping for grilled fish or chicken.
