There's just something about a homemade soup recipe that brings warm and cozy feelings. Our Spuds 'n' Spinach Soup is no exception! The creamy, hearty texture will warm you from the inside out, and while we know this is perfect for St. Patrick's Day, we also know it makes a heartwarming meal any day of the week. 

What You'll Need

  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 carrots, diced
  • 5 cup chicken broth
  • 5 large potatoes, peeled and finely diced
  • 2 (10-ounce) packages frozen creamed spinach, thawed
  • 2 cup (1 pint) half-and-half
  • 1/2 teaspoon black pepper

What to Do

  1. In a soup pot over medium heat, heat oil until hot. Add onion and carrots, sautéing 5 to 6 minutes or until tender. Add chicken broth and potatoes; bring to a boil.
  2. Let mixture boil 12 to 15 minutes or until potatoes are fork-tender.
  3. Add remaining ingredients and cook 8 to 10 minutes or until heated through. Serve immediately.
