Using leftover chicken or turkey (or a store-bought rotisserie chicken) allows this Super Easy Tortilla Soup recipe to come together in no time at all!
What You'll Need
- 4 celery ribs, chopped
- 3 carrots, chopped
- 1 (10-ounce) can mild enchilada sauce
- 4 cup water
- 6 chicken bouillon cubes
- 1/2 teaspoon lemon pepper
- 2 cup chopped cooked chicken (see Note)
- Crushed corn tortilla chips
What to Do
- Bring first 6 ingredients to a boil in a saucepan over medium heat. Reduce heat, and simmer 20 minutes, stirring occasionally.
- Stir in chicken, and cook until thoroughly heated.
- Place tortilla chips evenly into bowls; spoon soup evenly over chips. Serve immediately with desired toppings.
Notes
If you have leftover chicken or turkey, use it up in this easy soup-you only need 2 cups. If you don't have leftovers, no worries-just pick up a deli-roasted chicken from the grocery store. You'll get 3 to 3-1/2 cups chopped chicken from a whole bird.
