Turkey Mushroom Meat Loaf

Meat loaf sure is popular, so here's a way to enjoy it in a lower-fat version.

What You'll Need

  • 3 tablespoon peanut or vegetable oil
  • 1 large onion, chopped
  • 1 large celery stalk, finely chopped
  • 1 garlic clove, finely chopped (optional)
  • 6 ounce fresh mushrooms; cut into quarters (about 2 cups)
  • 1 pound ground turkey
  • 2 cup seasoned stuffing cubes
  • 2 tablespoon ketchup
  • 1 egg
  • 1 cup chicken bouillon, dissolved in 1 cup hot water, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

What to Do

  1. Preheat the oven to 325°F.

  2. Heat the oil over medium heat in a large skillet. Add the onion, celery, and garlic and cook until vegetables are soft and transparent, about 5 minutes. Turn the heat to high, add the mushrooms, and cook for another 3 minutes; place the mixture in a large bowl.

  3. Add the ground turkey, stuffing cubes, ketchup, egg, 1/2 cup bullion, salt, and pepper to the vegetable mixture. Mix very well, then mold mixture into a loaf and place in a 7'x11' baking pan that has been coated with nonstick vegetable mixture.

  4. Pour the remaining bouillon around the loaf; place on the middle rack of the oven and bake for 50 to 60 minutes, or until well browned.


Notes

You might want to serve this with cranberry sauce on the side. You can also use ground veal, beef, or pork - or a combination!
