Turkey Oscar

This has the fancy appeal of Veal Oscar, but takes lots less $$!
What You'll Need
- 2 eggs, beaten
- 2 tablespoon water
- 1 cup dry bread crumbs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 6 turkey cutlets, sliced about 1/3-inch thick
- 1/2 cup vegetable oil
- 1 box (9 ounces) asparagus cuts, thawed
- 1/2 pound flaked crabmeat or 1 package (8 ounces) imitation crabmeat, flaked
- 1 package (1-1/4 ounces) Béarnaise or Hollandaise sauce, prepared according to package directions
What to Do
- Preheat the oven to 375°F.
- In a shallow dish, beat together the egg and water. In another shallow dish, mix together the bread crumbs, salt, and pepper. Dip the turkey in the egg mixture, then in the bread crumb mixture. In a large skillet, heat the oil over medium-high; add the turkey and sauté until golden.
- Place the cooked turkey in a 9"x13" baking pan, place the asparagus cuts over the turkey, place the crabmeat over the asparagus, and spoon the Béarnaise sauce over the crabmeat, distributing all evenly.
- Bake for about 20 minutes, or until the sauce bubbles.
