Asparagus Casserole

What a great accent for a special meal! This Asparagus Casserole pairs well with just about every dinner recipe under the sun. From chicken to steak to fish and more, you can always enhance your mealtime with some asparagus. Plus, you'll feel good about eating this green veggie since it's such a great way to get together a well-balanced meal. For potlucks or weeknights, this asparagus casserole is a guaranteed hit.
What You'll Need
- 6 ounces butter-flavored crackers, divided (half of a 12-ounce package)
- 2 (15-ounce) cans asparagus spears, drained with 1/2 cup liquid reserved
- 1 1/2 cup (6 ounces) shredded sharp Cheddar cheese, divided
- 1 (10 -ounce) can condensed cream of mushroom soup
What to Do
- Preheat oven to 350 degrees F. In a 2-quart casserole dish that has been coated with cooking spray, layer one quarter of crackers, one third of asparagus, and one third of cheese.
- Repeat layers two more times and top with remaining crackers.
- In a medium-sized bowl, combine soup and reserved 1/2 cup asparagus liquid; mix well.
- Pour evenly over casserole and bake 30 to 35 minutes, or until heated through and top is golden.

I have been making a similar recipe for more than 40 years. Unfortunately, I recently "lost" a lot of my favorite recipes in a fire a few years back. You might like these substitution/alternatives as well. 1-Use crackers (crushed) only on the top the casserole, not in layers. 2-Use either Cheddar Cheese, Cream of Celery or Cream of Asparagus Soup. 3-As you are layering the asparagus, make a layer of sliced hard boiled eggs. Using any of these alternatives/substitutions makes a great casserole, just follow recipe above as it exists. Mr. Food and Staff , thanks for sharing this recipe, you've allowed me to recreate a beloved family favorite casserole.

Oh my gosh... my family has been making this for any "special occasion".. holidays and such ... Mom found it somewhere !!! ... Whenever my family sees this on the table .. and it isn;t a holiday .. they all look around and say "" someone having a bad day "" ... cause they know it is sooooo special :)

i would use the cream of asparagus soup in place of the cream of mushroom.

I would use fresh steamed asparagus (my microwave cooker uses water and salt-that's the liquid I need) and the condensed soup now has many flavors- cream of onion sounds good, and the cheese could be your choice, also !
