Boiled Turnip Greens

Very, very Southern simple, so why not have these veggies "turn up" on your family's plates tonight? They're a super change of pace!
What You'll Need
- 2 (16-ounce) packages frozen chopped turnip greens, thawed
- 1 (4-ounce) piece salt pork
- 1/4 cup water
- 2 tablespoons butter
- 1 1/4 teaspoon salt
- 1/4 teaspoon black pepper
What to Do
- In a large pot, bring all ingredients to a boil over high heat. Reduce heat to medium, cover, and cook 25 to 30 minutes, or until tender, stirring occasionally.
Notes
Sure, you can use 2 to 2-1/2 pounds fresh turnip greens instead. Remove the stems and wash the greens. You can leave them whole or chop them; boil them until wilted, then drain. Return them to the pot and proceed as above.

Cut up the salt pork and saute it with some onions and jalapenos until it cooks down THEN add the water and greens and don't add ANY more salt until the greens are almost done. If they have a strong taste add some sugar a teaspoon at a time. Cook a pone of cornbread and enjoy.

This also works using smoked turkey in the place of the pork.. Either smoked turkey legs or smoked turkey sausage work equally well and reduces the fat and sodium content.
