Lemon Pepper Green Beans

If you want to get fancy schmancy, use those French-style green beans. They're oh-so-thin, elegant, and delicate.
What You'll Need
- 1 quart water
- 1/2 teaspoon salt
- 1 pound fresh green beans
- 2 tablespoon butter
- 1 tablespoon grated lemon rind
- 1 1/2 teaspoon lemon juice
- 1/2 teaspoon black pepper
What to Do

Bring 1 quart water to a boil in a Dutch oven; add salt and beans. Cook 6 minutes; drain. Plunge into ice water to stop cooking process; drain.

Melt butter in Dutch oven over medium heat; add beans, and saute 2 minutes. Add lemon rind, and saute 1 minute. Stir in lemon juice and pepper. Serve immediately.
