Need a lighter alternative to french fries that'll still leave everyone smiling? Our Parmesan Zucchini Sticks have got the crispiness of french fries and the crunchiness of zucchini, making this summer vegetable a hit in all houses!
What You'll Need
- 1/2 cup fine, dry breadcrumbs (prepared)
- 1/2 cup grated Parmesan cheese
- 3 zucchini
- 1 large egg, lightly beaten
- Vegetable oil
- 1/2 teaspoon salt
What to Do

Combine breadcrumbs and cheese. Cut zucchini in half crosswise; cut each half into 8 sticks. Dip zucchini sticks in egg; dredge in breadcrumb mixture.

Pour oil into a Dutch oven or large heavy saucepan to a depth of 2 inches; heat to 375 degrees F. Fry zucchini sticks in hot oil just until coating is golden. Drain on paper towels. Sprinkle with salt, and serve immediately.

sounds good- I have done something similar. no egg dip just slice zucchini in half lengthwise, wipe to dry, butter, cover with parmesan etc. broil ( I use a toaster oven) til browned

I have a question. I would rather bake than fry. Is it possible to use cooking spray and bake the zucchini? Does anyone have a suggestion for time and oven temperature to do this?

Yes! Fiery Zucchini Fries Makes: about 48 zucchini strips Cooking Time: 15 min Ingredients 3 medium-sized zucchini (about 1 pound total) 1 1/2 cups crushed nacho-flavored chips 1/4 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 2 eggs Cooking spray Instructions Preheat oven to 450 degrees F. Coat a baking sheet with cooking spray; set aside. Cut each zucchini in half crosswise then cut each half lengthwise into french-fry-like strips. Place the chips, garlic powder, salt, and cayenne in a shallow dish; mix well. In another shallow dish, whisk the eggs. Coat each zucchini strip in the egg mixture and coat completely with the chip mixture; place on prepared baking sheet. Spray fries with cooking spray and bake 15 minutes, or until crispy. Serve immediately. Note Serve Fiery Zucchini Fries with your favorite dipping sauce.

These ARE great. BUT...I have 2 dips on hand- ranch and Marinara sauce.!!!

These really are sooooooooooooo good Better than breaded mushrooms..have zucchini in my garden right now
