Spinach Souffle

There's something elegant about souffle. And there's something great about this one: It's easy!
What You'll Need
- 1/2 cup mayonnaise
- 1/4 cup all-purpose flour
- 2 tablespoon grated onion
- 1/4 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon ground nutmeg
- 1 cup milk
- 1 package (10 ounces) frozen chopped spinach, thawed and drained well
- 4 eggs, separated
- 1/4 teaspoon cream of tartar
What to Do
- Preheat the oven to 400 degrees F. In a medium-sized saucepan, stir together the mayonnaise, flour, onion, garlic powder, salt, pepper, and nutmeg. Cook over medium heat for 1 minute, stirring constantly; gradually add the milk, stirring until smooth; continue cooking until thick, 3 to 4 minutes, stirring constantly. Do not boil.
- Remove from heat, beat in the spinach, then the egg yolks; set aside.
- In a small bowl, beat the egg whites and cream of tartar with an electric mixer on high speed until stiff peaks form; fold into the spinach mixture (do not overmix).
- Spoon the mixture into a greased 2-quart souffle or casserole dish; place on the lowest rack of the oven and immediately reduce the temperature to 375 degrees F.
- Bake for at least 40 minutes, or until the top is puffed and has a golden-brown crust. Serve immediately.
