What You'll Need
- 1 carrot, sliced diagonally, or 1 (16-ounce) package frozen sliced carrots
- 1/4 cup orange juice
- 1 tablespoon lime juice
- 2 teaspoon butter
- 1/2 teaspoon salt
- 1/3 cup honey
- 1 teaspoon minced fresh ginger (optional)
- 1/2 teaspoon grated orange rind
- 1/2 teaspoon grated lime rind
What to Do
- Cook first 5 ingredients in a 2-quart saucepan over medium heat 20 minutes or until carrots are tender, stirring often.
- Remove from heat; stir in honey and remaining ingredients.
Notes
Get double-duty from your orange and lime by grating the rind before squeezing for the juice.
