Tomato Relish

What a super way to use up our harvest of tomatoes. And with the addition of a few off-the-shelf ingredients, this relish is ready in no time!

What You'll Need

  • 4 large tomatoes, chopped
  • 1 large onion, chopped
  • 2 tablespoon chopped fresh jalapeño peppers
  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • 2 teaspoon salt

What to Do

  1. In a large pot, combine all the ingredients over medium heat; mix well. Cook for 30 to 35 minutes, or until thickened, stirring occasionally. Remove from the heat and allow to cool completely.

  2. Store in an airtight container and chill overnight before serving.

  3. Makes about 2 cups.

Notes

I like to add a little more jalapeño pepper for a really zippy tomato relish.
