This cozy all-in-one-pan Amish Country Meat Loaf & Potato Casserole is so simple to make, and such a satisfying main dish meal. It fits a busy weeknight or a leisurely family Sunday dinner perfectly. No matter when you make this, the tastes will wow everyone after just one bite!
What You'll Need
- 1 1/2 pound ground beef
- 1/2 cup chopped onion
- 2 slices white bread, torn into small pieces
- 1 egg
- 1/3 cup ketchup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups seasoned mashed potatoes
What to Do
- Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
- In a large bowl, combine all ingredients except mashed potatoes. Place mixture in prepared baking dish and bake 35 minutes. Remove from oven, drain off any fat, and evenly spread mashed potatoes over top.
- Return casserole to oven and cook 25 to 30 more minutes, or until no pink remains in beef and potatoes are hot.

I have been making this basic recipe since the mid- s Recipe in a pamphlet at the grocery store I ALWAYS use my favorite meat loaf recipe - AND - I use chili sauce instead of ketchup Chili sauce perks it up better than ketchup I use a -inch glass pie dish for baking After the initial - minutes baking - I remove from oven and LINE the meat mix with my favorite cheese jalapeno cheese - THEN I add the mashed potatoes on top of cheese to finish the baking AND sprinkle some grated cheese on top of potatoes Would usually serve broccoli or glazed carrots as side dish ANYMORE - since the childer are grown and gone - I use instant mashed potatoes NOW just wait - I doctor the instant mashed potatoes with lots of butter good flavored oleo finely sliced onion a tad of garlic and just…Read More add a little dry creamer because I do not usually have milk on hand NOTE try chili sauce INSTEAD of ketchup in various other recipes - REALLY PERKS UP BETTER THAN KETCHUP -

P.S. - This "Hamburger/Meat Pie" freezes really well! Cut into serving size pieces and freeze. Good for another meal(s) OR to take in "lunch box" to work and warm up - most places have a microwave oven anymore.

This sounds a lot like Shepherd's Pie. Only thing is, between the meat and the potatoes is a layer of mixed vegetables. At least that is how I make it. I'm from Texas, and now live in fairly Dutch area, and the people I know around here don't call it Country Meat Loaf...just sayin'. Doesn't mean it's not true, in bigger areas. But, seeing this made me want to make Shepherd's Pie. So based on that similarity, I would give this recipe a 5..with some minor changes.

Made this gluten-free by subbing 20 Glutino Original Bagel Chips (crushed) for the bread, also added half a cup chopped green pepper...it was outstanding.

I call this Shepard's Pie and make it by just browning hamburger with onion and garlic powder or fresh garlic, mix with a can of mixed veggies, and make a brown gravy, using just a little in the meat mixture and the rest on the side for when the casserole is done.

We used to have Shepard's Pie in grammar school,in the 50's, and it resembled this dish. It also had a layer of cheese between the ground beef and the potatoes. The lines were long on the days it was served.

I have been eating this dish for seventy years, back home in England it is called Shepherds Pie, I never get tired of eating it and my friends love it. Thanks for the spin on this recipe :-)

I think you will find that this is cottage pie made with beef and shepherds pie is made with lamb

I tried this dish TEXICANIZED, small p[ork or beef roast pulled w/veggie, mashed tater or tater tots on top mixed w.onion soup mix, some japs & mince garlic, a small can of totoma paste mixed w/above ingeridents and pour over the meats & taters,U pick the cheese for the top ans salad and garlic bread and vino!!!!!!!!!!!!!!!!!

Is a keeper....I added one teaspoon of garlic powder to meat ; also one half cup of shredded cheddar on top of potatoes.

Adding This to my box. Green beans, cabbage and Cheese sound like good variations for one dish meals. I will stick to making my meatloaf with oats instead of beread crumbs and adding a bit of ground pork or sausage to it though.

I have made this dish for years, but i put green beans in befor the potatoes, and put chedder cheese on. The whole family loves it. Nothing ever left.

I too watch what I eat I have learned how to replace certain ingredients in recipes to make them healthier Replace the ground beef with extra lean ground beef Add two egg whites instead of the whole egg The egg whites have no cholesterol and on cals per white plus they are still a good source of protien Use whole wheat bread instead of white It not only is better for you but you can get it with lower sugar or no sugar added at all now Skip the salt altogether and add different spices Any ones that you like and prefer will do As far as the seasoned mashed potatoes go you can season them without adding salt You can now buy ketchup that has no added sugar too By making these simple ingredient changes you will not only make recipes healthier but will also cut the calories down a…Read More good bit

I'd like to try several of your recipes, but nowhere have I found nutritional information. Those of us with diabetes, salt restriction, low-carb, etc. need to know this.

With us watching what we eat to control blood pressure, high cholesterol ...etc the nutrition servings would be helpful..what I did with this receipe.. instead of bread I used 1/2 cup of Panko, instead of 1 egg I used 1/4 cup of egg beaters. It came out good and I cut out alot of sodium, sugar, and fats.

I made this over the weekend and it was awesome. The meatloaf was perfect and the potatoes just made it even more yummy!! I used ground turkey instead of beef, but it still tasted great.
