There's more than one way to be a ham! When you want to please the gang and take all the credit for yourself, this Scalloped Potatoes and Ham casserole recipe will win you loads of raves.

What You'll Need

  • 3/4 pound fully cooked boneless ham, cut into 1/2-inch chunks
  • 1 (26-ounce) package frozen shredded hash brown potatoes, thawed
  • 2 (10 -ounce) cans condensed cream of celery soup
  • 1 (10-ounce) package frozen peas
  • 1 1/2 cup milk
  • 1/4 teaspoon black pepper

What to Do

  1. Preheat oven to 350 degree F. Coat a 9" x 13" baking dish with cooking spray.
     
  2. In a large bowl, combine all ingredients; mix well then pour into prepared baking dish and cover tightly with aluminum foil.
     
  3. Bake 30 minutes then uncover and bake 50 to 60 more minutes, or until potatoes are tender and the top is golden.

I'm not seeing any red in the photo on my end - the ham looks a pinkish color. You might want to go into your computer's display settings and adjust the contrast. I think typically scalloped potatoes with thinly sliced potato rounds, so I might call this a julienned or hash brown potato casserole. This version is much lower in fat than many similar recipes, since it uses the cream soup instead of heavy cream. Some chopped scallions would be really tasty in this too.

The only thing missing would be shredded sharp cheese. And, maybe I would add cheddar cheese soup also or, cream of chicken soup. Will print and add my notes.

Did something get omitted from the recipe? What is the red in the picture? Plus, I would use fresh potatoes from my pantry instead of frozen hash browns.

The red you see in this picture are pieces of ham. It's actually more pink than red, but everyone's monitor is a little bit different. Thank you!

If you use fresh potatoes from your pantry, you will probably have to add extra baking time, because they will be a lot firmer than thawed hash browns.

I made this recepie and it is simple but the timeing is way off. I put it in the oven at 8AM and it was not done till 10:20. Just know if you have a certain time just allow for it. Lucille
