What You'll Need
- 1 pound hot Italian sausage, cut into 1-inch pieces
- 2 bell peppers (1 red and 1 yellow), cut into thin strips
- 1 1/2 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- 1 sweet onion, thickly sliced
- 5 cloves garlic, coarsely chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (15-ounce) can sliced white potatoes, drained
- 1/4 pound sliced mushrooms
- 1/4 cup fresh chopped parsley
What to Do

In a Dutch oven or soup pot over medium-high heat, cook sausage and bell peppers 10 minutes, or until browned, stirring occasionally.

Add the chicken, onion, garlic, salt, and black pepper. Cook 8 to 10 minutes, or until chicken is no longer pink, stirring occasionally.
- Stir in the potatoes, mushrooms, and parsley. Reduce heat to low, cover, and simmer 5 to 7 minutes, or until the mushrooms are tender and the potatoes are heated through.

This recipe was absolutely fabulous. My only issue is that I made it for three myself, my husband, and our 6 year old son and there wasn't enough. We all wanted seconds and couldn't have them so next time I just plan to double the recipe. This one is definitely a keeper though we ALL loved it!

Only 2 of us, so I cut the ingredients - used 1 boneless skinless chicken breast as that's what I had & 3 links of sweet turkey Italian sausage, 1 green pepper. No canned tomatoes so I sliced 4 small red ones with the skin on, put them in the pot with a little water to cook 10 minutes, covered. Added the sausage & pepper, covered a little while, about 10 minutes, then added everything else, seasoned, covered on low, cooked 10 minutes more, then uncovered, turned up the heat and kept stirring until all the liquid was absorbed (this makes the chicken more tender). Sprinkled with garlic powder as I didn't have fresh. This is a DEFINITE KEEPER, and even cutting back there is enough for another meal. Easy and tasty - thanks folks at Mr. Food.

702 calories with regular Italian sausage. If you use Jennie-O Italian Turkey sausage links, you are at 509 calories. This is for 1/4 of the recipe. I used MyFitnessPal's recipe importer to figure it.

Substituted fresh parley for dried, didn't use a red pepper or mushroom, and it still tasted fantastic! Definitely will try again. So good!

Excellent. Added some carrots and instead of canned used potatoes I'd precooked. Served with cornbread but would be good with a crusty loaf or rolls.

I also use garlic in a jar. 1 clove garlic = 1 tsp garlic in a jar (minced, chopped or paste). Hope this helps.

I think this looks very good. Haven't had a chance to try it yet. I would like to see garlic listed in teaspoons, since I use chopped garlic in a jar. Thanks, Butterfly1943
