Make your own rotisserie-style chicken at home with our easy recipe for Mama's Garlic Chicken. The aromas that'll come out of your oven are so amazing, that you'll have the whole family running to the dinner table.

What You'll Need

  • 1 (3-1/2 pound) whole chicken
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 cloves garlic, peeled
  • 1 cup chicken broth

What to Do

  1. Preheat oven to 400 degrees F. Place chicken in a lightly greased shallow pan. In a small bowl, combine olive oil, salt, and pepper. Rub on chicken.  
  2. Place garlic in chicken cavity. Pour broth into chicken.
  3. Bake, uncovered, 1-1/4 to 1-1/2 hours, or until meat thermometer inserted into thigh reaches 175 degrees F or until no longer pink in center, basting occasionally with broth. Let sit 5 minutes, then cut and serve.

Better check that internal temp at 165 and not wait till 180. Moist and juicy takes a big hit at 180 degrees.

Hello there! The U.S. Department of Agriculture recommends 180 degrees for whole chickens. The white meat tends to cook faster then the drumsticks and thighs, so make sure to insert thermometer into dark meat area. Enjoy!

Thanks Test Kitchen folks. If I did as the USDA suggests on roasting my chicken, don't believe I would ever enjoy chicken again. lol Take the bird out at 165 internal, cover for 10 min and you have moist and completely cooked chicken. At least that has been my experience.

This sounds so good. I will baste the chicken several times to get the flavor through the whole chicken better. I get garlic chicken from Walmart and it is so good. This sounds like it will be really close to Walmarts.

I squeezed1/2 of a large lemon and drizzled all over chicken put the lemon half inside chicken melted about 1 tablespoon butter and mixed it with olive oil salt pepper then rubbed on used the chicken broth for basting pretty good this way!
