Cookie Cups

Try flipping your muffin tins over and using the bottoms to make edible cookie cups. What colorful, fun treats you can make by filling them with lots of different fillings! The combinations are endless.
What You'll Need
- 1 (18- to 20-ounce) package refrigerated cookie dough, any flavor
- Assorted fillings (optional)
What to Do
- Freeze packaged dough for an hour, until firm. Preheat oven to 350 degrees F.
- Turn a regular-sized muffin tin (or tins) upside down and spray bottom(s) with cooking spray. Slice firm dough into 1/2-inch slices and place a slice on each cup.
- Bake 11 to 13 minutes, until dough has baked around cups and turned golden brown. Cool cups 5 to 10 minutes before carefully removing them from pan(s).
Notes

The cups are very delicate, so remove them gently. If any do break, it's not a problem, just eat those plain as regular cookies. Fill sugar cookie cups with pie filling or fresh-cut fruit and whipped cream for individual pies. Or how about making chocolate chip cookie cups and filling them with chocolate pudding? WOW!

I love all of the suggestions here.. my first thought when reading the recipe/instructions and seeing the picture was.. I bet it'd taste great if it was filled with ice cream :) I haven't tried it.. yet..

why not use a biscuit cutter in the cookie dough for the outside of the muffin tin pan instead of the strips?

The directions say to put a slice of cookie dough on an upside down muffin cup. How does that make it hollow? Do they mean wrap the dough around the upside down up? OR?

As the cookie bakes, the oven heat molds the dough to the shape of the upside-down muffin cup. I'd just be sure to spray them heavily so they'll come off the "mold" in one piece!

been making my cookies like this for years using the small muffin cups...usually peanut butter and pop a peanut butter cup in them when they come out of the oven. Pop them out when they cool by turning over and tapping the pan. Also use hershey kisses. You can use the tart papers in the tins if you want to give them a decorative outside. They are great bite size bites and look pretty on a tray when you serve is you use different color liners.

After reading the reviews I made these only I used the cupcake pan right side up. After spraying the pan, I put about a tablespoon's worth of cookie dough in each cup and let them bake. When they came out of the oven I immediately used a shot glass and pressed the bottom of the glass into each "cookie cupcake". This forms a great cookie cup! Let them cool and then they should be easy to remove without them breaking and they look great. I've filled them with peanut butter, Nutela, even chocolate ganache. You can also make them using the mini cupcake pan for a smaller version.

I do the same thing with the shot glass...perfect size to make a nice well. Filled some chocolate chip dough the other day with a chocolate marshmallow filling mixed with sugar coated nuts....delicious!!! Will try some little lemon and lime meringue pies for this weekend. Endless possiblities and so easy to make.

I wonder if you put parchment paper over the muffin tin first if they would be easier to remove? Or better yet-- put a silicone muffin pan over the top of a metal one so it doesn't lose it's shape and then place cookie dough on the silicone pan and bake.

I made these! Well, I tried.... The cookies were hard and fell apart when i tied to get them of of muffin pans! I followed directions to the "t'. Don't waste your time! Looked great and was very disappointed!!!

What a Great idea! i am going to fill the sugar cookie cups with sweetened strawberries and top with whipped Cream fresh sliced peaches sound good too!
