Need a quick snack for the after-school crowd? Please all the little ones in your house by popping some Three Minute Cupcakes in the microwave. These easy cupcakes are not only ready in a flash, but they're easy and tasty!
What You'll Need
- 1/2 cup sugar
- 1/3 cup all-purpose flour
- 1/3 cup unsweetened cocoa
- 1/4 teaspoon baking powder
- 1 egg
- 1/4 cup mayonnaise
- 1/4 cup milk
What to Do

Line a microwave-safe 6-cup muffin pan with paper liners, or place paper liners side by side in a microwave-safe 7-inch by 11-inch baking dish.

In a medium bowl, combine all ingredients and mix until well blended.

Spoon mixture into paper liners and cook in microwave at 80 percent power 3 minutes. Remove cupcakes and let cool before serving, or frosting, if desired.

For serving, you can make these really festive in no time by frosting cooled cupcakes with your gang's favorite frosting-homemade or store-bought-and topping with colored sprinkles. Oh, and remember to use paper, not aluminum, muffin liners in microwave oven.
Notes
Did you know that chocolate melts perfectly in the microwave? Simply heat it at 80 percent power, uncovered, until shiny and almost melted, then stir until completely melted and smooth. Then, for a delicious treat, simply dip strawberries, marshmallows, or practically anything else you want in the melted chocolate!

I can't see how you could get 6 cupcakes out of 1/3 cup of flour. Also would self raising flour work if I eliminated the baking powder?

I know this is a time saving recipe but I Ilike this because it makes a small amount of cupcakes for singles. Could these be baked in an oven since my microwave is not accurate when using different powers.

I would start with the standard 350 deg. for 10 min. or toothpick comes out clean. You can adjust from there for the next batch.

Microwave ovens are not all the same. Some have twice as much power as others. So, 80% power in one may be very different than 80% power in another. Please be more accurate with the cooking time considering different levels of power (700 watts vs. 1500 watts). Thanks.
