It's a down-home, "oldie but goodie" recipe filled with hard-boiled eggs, celery, mayo, and other classic add-ins. Homestyle Potato Salad is a great picnic or potluck bring along, plus it'll keep for days in the fridge.
What You'll Need
- 4 pounds white or red potatoes
- 10 hard-cooked eggs, peeled and chopped
- 1/2 green or red bell pepper, diced
- 3 ribs celery, chopped
- 1 cup reduced-fat sour cream
- 1 cup light mayonnaise
- 1 tablespoon white vinegar
- 2 tablespoons nonfat milk
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- Place potatoes in a large soup pot, cover with water, and bring to a boil over high heat. Cook 25 to 30 minutes, or until fork-tender. Drain and cool slightly.
- Cut potatoes into chunks and place in a large bowl. Add egg, bell pepper, and celery; set aside.
- In a medium bowl, combine the remaining ingredients; mix well. Pour sour cream mixture over potatoes and mix until thoroughly combined. Chill 2 to 3 hours before serving.

Thank you for your question! This particular potato salad recipe does not contain onions. However, if you like onions, go ahead and add them! That is the great thing about cooking, you can always make it your own! Enjoy!

Test kitchen which is best. boil spuds with skins on or off. I hate mushy tater salad.

If you don't like a mushy potato salad, leaving the skin on is better, and undercook the potatoes for a couple minutes less in water.

I microwave the potatoes instead of boiling them, keeps them from getting mushy. Skins on or off is up to individual tastes.

After reading all these potato salad recipes and scratching my head in total confusion, why in the world would anyone spend so much money on this 'stuff'? A good/delish potato salad should include: potatoes, chopped celery, onions, sweet relish, pickles, eggs, Mayo or Miracle Whip, Bacon crumbled, Mustard. Now, add or delete the ingredients YOU like, stir well, cover w/ plastic wrap and place in fridge till ready to serve. I forgot the salt & pepper and that is added to 'YOUR' taste. If the salad is too thick, add a little pickle juice till the consistancy 'YOU' like. In other words, food prep in YOUR kitchen should be to YOUR liking/taste buds. Don't waste $$$ on ingredients you don't like or will never use again. Tater Salad is easy too make---simply add the ingredients you enjoy eating.

This is absolutely the most wonderful tasting potato salad ever.
