Bacon 'n' Egg Cups

Are your mornings always a little hurried? No problem! With our easy to make breakfast recipe for Bacon 'n' Egg Cups you can prep ahead of time, and bake 'em right before breakfast. That way you can enjoy cheesy-bacon goodness even when you're in a rush!
What You'll Need
- 1 refrigerated pie crust (from a 15-ounce box)
- 5 eggs
- 2 tablespoons milk
- 2 tablespoons bacon bits
- 1 scallion, chopped
- 3/4 cup shredded Cheddar cheese, divided
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
What to Do
- Preheat oven to 425 degrees F.
- Cut pie crust into 4 equal pieces. Fit pieces over back of a cupcake tin, molding each to fit around a cup. Place on a baking sheet.
- Bake 8 to 10 minutes, or until light brown. Cool 5 minutes, then remove from muffin cups and invert onto baking sheet.
- Reduce oven to 375 degrees F. In a medium bowl, combine eggs, milk, bacon bits, scallion, 1/2 cup cheese, the salt, and pepper; mix well. Spoon mixture equally into individual cups, and sprinkle each with remaining cheese.
- Bake 20 to 25 minutes, or until eggs are set.

I have some mini pie I have some mini pie pans and would like to know if they could be used instead of the stand alone cups. I know that the pans would probably use more filling and make fewer but I am single and that might be better for me.

Hello there! Yes! You can definitely use the mini pie plates. However, the amount of filling and time to bake may differ. Enjoy!

This was not exactly the recipe on TV....they used frozen biscuits and put in muffin pan and added eggs, bacon some kind of cheese ...I would like to do it exactly like they did as liked it.

This is so easy and tasty! You also can omit the bacon bits, and use cooked sausage instead. Very, very yummy! Experiment with different cheeses too. You can, although the cup itself may not be as crisp as the pie crust will be. This is actually a "method" recipe. I have used canned biscuits as the cup with success - but I just pressed the biscuit into the muffin tin and baked it a few mins before adding the ingredients. I have also used the biscuits and filled them with a sloppy joe mixture - which made my son very happy - even cold in his lunch the next day! Could make any blend of filling you'd like - pizza?

FUN TO MAKE AND VEY EASY AND FAST FOR BREKFAST. MAKE THE CUPS AHEAD OF TME AND FILL LATER. DO BECAUSE THERE ARE ONLY TWO OF US AND I HAVE A COUPLE ON HAND FOR ANOTHER BREKFAST.
