Pistachio-Crusted Salmon

Mr. Food welcomes guest chef Carmen Sprio, who shares a delicious recipe for salmon! It's got a secret crunchy topping that makes this a great dish for company or anytime you want to enjoy the healthy benefits of salmon.
What You'll Need
- 1/2 cup finely crushed Cap'n Crunch cereal
- 1/4 cup finely crushed butter-flavored crackers
- 1/4 cup finely chopped pistachio nuts
- Cooking spray
- 1 pound salmon fillets, skin removed and cut into fingers (strips)
What to Do
- Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
- In a shallow dish, combine cereal, crackers, and nuts; mix well.
- Lightly coat salmon fingers with cooking spray then dip in cereal mixture, coating completely. Place on prepared baking sheet and lightly coat with cooking spray.
- Bake 10 to 12 minutes, or until fish flakes easily with a fork.
