Avocado Breakfast Boats

Clear the deck sailors! Our recipe for Avocado Breakfast Boats is so good it'll blow your taste buds right out of the water! Just imagine: a fresh avocado and tomato salsa mixed together and served over fluffy, scrambled eggs right in the avocado "boats"...it's a breakfast delight!
What You'll Need
- 2 avocados, halved and pitted
- 2 ripe plum tomatoes, seeded and diced
- 1/4 cup diced red onion
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon finely diced jalapeno (optional)
- 1 tablespoon lime juice
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 8 eggs
What to Do
- Using a spoon, scoop the avocado out of the skin in one piece, keeping the shell intact. Dice avocado and place in a large bowl. Toss with tomato, onion, cilantro, jalapeno, if desired, lime juice, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cover and refrigerate until ready to use.
- In a medium bowl, beat eggs with remaining salt and pepper.
- Coat a skillet with cooking spray and heat over medium-high heat. Add eggs to skillet and scramble until set, stirring occasionally.
- Evenly divide scrambled eggs into avocado shells and top with avocado mixture. Serve immediately.

I love to mix a little homemade salsa with my scrambled eggs, so this healthy recipe is right up my alley! Since it incorporates salsa ingredients deconstructed, everybody can make theirs as spicy or mild as they like it. Using the avocado skin for serving is very cute and makes these just a little more special!

With each recipe, I am learning to like the avocado more and more. This however does not look like a recipe that I would enjoy but I know my two sons would love this. I can surprise them the next time they come for a visit. I will be saving this recipe.

This is a very healthy recipe. You could even elect to use egg whites only to make it that much more healthy. This is almost a eat on the go recipe but you would really need to use a fork to eat it.

THIS IS MY NEW FAVORITE BREAKFAST ITEM. I AM DIABETIC SO THIS IS A GREAT CHOICE FOR ME. THE NAVY SHIP TOOK ME BACK ABOUT 40 YEARS. MY COUSIN WAS STATIONED ON THE USS CAMDEN AND TOOK ME TO FAMILY DAY. WE SAILED AROUND CATALINA, TOURED THE SHIP. BEST OF ALL FOR A 17 YEAR OLD GIRL WE ATE LUNCH SURROUNDED BY ALL THOSE UNIFORMED SAILORS.

We made this delicious recipe using chorizo and used a dab of sour cream , it was to die for . The family loved it!
