Dont pass up this change-of-pace salad for your next dinner party or picnic. Its sure to have everybody talking (and asking for your recipe)! Yup, the flavors of Dijon mustard, mint and sour cream blend perfectly in this Minty Pea Salad.
What You'll Need
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup finely chopped fresh mint
- 1/4 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 (16-ounce) bag frozen peas, thawed
- 1/4 cup finely chopped onion
What to Do
- In a large bowl, combine mayonnaise, sour cream, mint, mustard, salt and pepper; mix well.
- Stir in peas and onion, until evenly coated. Cover and refrigerate for at least 1 hour before serving.

I've made this for years. The original called for mint, but I did not care for it, so I omit it. I also picked up a variation from the person in charge of my college dining room - small cubes of mild cheese - either mild cheddar, colby, or jack. It is so good.

I never use frozen pas in Pea Salad. I only use canned small peas-----drained.
