Here's our version of a classic Texan dish, and we've added a few extra ingredients to make our Creamy Hash Brown Bake something for your recipe book. This potato recipe is a favorite side dish with any meal, and now you can make them crispy and delicious right in your own kitchen.

What You'll Need

  • 1 (2 pound) package frozen hash brown potatoes, thawed
  • 1/4 cup chopped onion
  • 1 (10-3/4-ounce) can cream of chicken or mushroom soup
  • 1 (16-ounce) container sour cream
  • 2 cups (8 ounces) shredded Cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 green bell pepper, chopped
  • 1/2 cup dry bread crumbs
  • 1/4 cup (1/2 stick) butter, melted

What to Do

  1. Preheat oven to 350 degrees F.
     
  2. In a large bowl mix together hash brown potatoes, onion, soup, sour cream, Cheddar cheese, salt, black pepper, and green pepper.
     
  3. Spread potato mixture in greased 9- x 13-inch baking pan.
     
  4. Mix together bread crumbs and melted butter and spread over potato mixture.
     
  5. Bake 45 minutes to 1 hour, until golden brown.

This reminds me of a dish I used to make years ago. I used same size potatoes but the southern style, small cubes. 1 can cream of celery (or any cream soup), 1 cup sour cream, 1/2 cup milk, 2 cups cheddar, 1 1/2 cup French's onions and 4 (or 6) pork chops. Mix all but chops but reserve 1/2 cup cheese and 1/2 cup French's onions. Place in 9X13 pan, cover loosely with foil, bake 45 mins then top with remaining cheese and onions and cook another 10 mins (remove foil for this part). The drippings from chops mingle with the potatoes and really makes a good dish.

I love this and make it often. I use crushed up ritz crackers on the top. No bell pepper or onions for me.

what's the diff. between this one and southern potato bake??

This is great! I use the O'Brien Hash Browns and omit the pepper and onion. Then I use Crushed Cornflakes with a 1/4 cup of crushed French's fried onions for the topping. For fun once, I used ranch dip instead of sour cream. Yum!

One last thing: I also omit the butter when I mix the cornflake crumbs and French's fried onion. The fried onions and the cheese in the casserole have enough fat to keep things crispy and brown on their own.

If you would rather, mix 2 cups lightly crushed corn flakes tossed with 2-3 T. melted butter or margarine and then sprinkle over prepared potatoes and bake as directed. I've done this for years and my family loves it this way!

I used crushed French's Fried Onions in place of the bread crumbs. I can't eat dairy anymore so I imagine it was as good as hubby said it was.

I love this dish! I don't add the bell pepper, and sometimes I've been known to add ham or bacon to make it more of a breakfast dish! Hope you enjoy it as much as I do!

We love this dish and definitely does not need the topping.

This dish is delicious and even better by omitting the bread crumb topping therefore eliminating some of the extra needless calories.

with the sourcream and cheese ans all the soup do you really need the butter?

The butter is to moisten the bread crumb topping.

I've used the french fried onions on top. It's really good!

jkayc, an 8 oz pkg of shredded cheese is the equivalent of 2 cups dry measure. 8 oz liquid measure is 1 cup.

I thought 8 oz is ONE cup!!?? How much cheese?? 8 oz or 2 C?? Am I to weigh or dry measure by cup?? One measuring method is fine....2 are confusing!

weight and cup amount are listed on most shredded chesses. it is a volume call while 8oz liquid is 1 cup, 4oz pk cheese is a cupful

I have made these Potatoes before, and they are also called Party Potatoes. For the top of this casserole, the original recipe calls for crushed Potato Chips and then drizzle melted butter over them. Excellent!!!!!

I made this and my family loved it.

This is one of my family's favorite potato dishes. Instead of the bread crumbs we sprinkle crushed potato chips on top. (That probably adds to the calories though!)

If I were to divide this up into 2 smaller dishes, how would it affect the cooking time? Thanks for your help.

I would start checking it after 35 minutes and every 5-10 minutes thereafter.

In lieu of cheese I add a can of cheddar cheese soup and just sprinkle some grated cheese on top. My family and friends enjoy it immensely.

Some of the recipes do have nutritional info; they must be adding gradually!

This looks like one of those recipes that can be made ahead and sit overnight. Is it and if so, can the prep the night before be done without thawing the potatoes?

It can be prepped the night before. I probably won't take as long to cook so be sure and check on it at about 35 minutes.

I make this all the time. Try it using Shredded Smoked Sharp Cheddar for a different flare.
