Sweet Relish Potato Salad

This Southern-style potato salad is perfect for picnics and parties...or any time we want a homestyle potato salad. It's super easy to make and everyone will be asking for seconds. With ingredients like celery and hard boiled eggs, Sweet Relish Potato Salad is a mom-approved country recipe.
What You'll Need
- 6 medium-sized baking potatoes
- 1 cup mayonnaise
- 4 hard-boiled eggs, sliced
- 1 small onion, chopped
- 2 celery stalks, diced
- 1/2 cup sweet pickle relish, drained
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
What to Do
- Place potatoes in a soup pot and add enough water to cover them. Bring to a boil over high heat and cook 20 to 25 minutes, or until fork-tender.
- Drain and allow to cool. Cut into chunks and place in a large bowl.
- Add remaining ingredients and combine until well mixed. Cover and chill for at least 2 hours before serving.

Only thing that I would change about this recipe is I would use 1/2 hellman's Mayo and 1/2 cup Yellow Mustard, as I prefer Mustard Deli Style Potato Salad over the Mayo type. And I would add chopped or diced Sweet Pickles, like baby Gerkins
