Summer Vegetable Salsa
- YIELDS
- 4 cups
Our garden-fresh Summer Vegetable Salsa is the perfect topper for grilled chicken or fish, or as a zesty homemade appetizer for corn chips.
What You'll Need
- 3 tablespoons red wine vinegar
- 1/3 cup olive oil
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 green bell pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- 1 yellow bell pepper, seeded and diced
- 1 small zucchini, diced
- 1/4 cup thinly sliced fresh basil leaves
What to Do
- In a small bowl, combine vinegar, oil, sugar, salt and black pepper; mix well and set aside.
- In a large bowl, combine remaining ingredients with dressing and toss until evenly coated. Serve immediately, or refrigerate until ready to use.

Since this "salsa" isn't spicy like traditional salsa, you could almost serve it as a marinated chopped salad side dish as opposed to just being a small portion condiment. A great way to showcase the fresh veggies in the summer when they are in peak season. I took some leftover grilled chicken, cut it into cubes, and made wraps with this veggie stuff in flour tortillas, and it was very tasty and super quick!

This was delicious on grilled Orange Roughy - added it to the fish the last 2 minutes of grilling. Cooked couscous, and added the rest of the salsa to that. Yummy!

It sounds good, but you need to a lot of other veggies to give it the WOW factor. I like some kick in my vegetable salsa.

My mother had her own adaptation of this receipe. She added cucumber, onion, and homegrown tomatoes. That really added to the "kick" of the salsa, and it was well know, most people that ate it loved the sauce as well as the veggies.
