Slow cooker recipes allow us to come home to a family dinner that's ready to serve, and our south-of-the-border recipe for Tamale Pie is a zesty all-in-one meal that's sure to please!

What You'll Need

  • 2 pounds ground beef, cooked and drained
  • 2 (28-ounce) cans diced tomatoes, drained
  • 2 cups frozen whole kernel corn
  • 1 (2-1/4-ounce) can sliced black olives, drained
  • 1 medium-sized onion, diced
  • 1 (1.25-ounce) package taco seasoning mix
  • 1 (16-ounce) package cornbread mix
  • 1 cup shredded Cheddar cheese

What to Do

  1. In a large bowl, combine cooked beef, diced tomatoes, corn, olives, onion, and taco seasoning; mix well then pour into a 6-quart slow cooker.
     
  2. Prepare cornbread mix according to package directions then spoon over beef mixture. Sprinkle with cheese.
     
  3. Cover and cook on high setting for 3 hours or low setting for 6 hours.

Can Corn Tortilla's be substituted for the cornbread?

I thought this was good also. Next time will add some diced peppers to give it a little kick

My son liked this dish, but I felt the cornbread mix was too sweet for the seasoning of the meat. So next time I will make my own cornbread batter so I can control the amount of sugar. I may also try this dish using shredded beef instead of ground so that it will be more like a tamale.

Delicious and well worth preparing!

I made this for my husband and he just loved it. It was really easy to make. My husband liked it so well I had to make it again but I was not going to complain because I really enjoyed it too!!!

I used diced tomatoes with chiles and a mexican cheese blend to give it alittle more kick...

THIS TAMALE PIE WAS OUT OF THIS WORLD. HOWEVER I DID NOT HAVE TACO SEASONING SO I USED CHILI POWDER AND CUMIN. DID I MISS OUT ON A DIFFERENT TASTE?

Marcy I've been using this homemade mix 1 tablespoon of minced dried onions 2 teaspoons of chili powder. 1 teaspoon of garlic powder. 1 teaspoon of ground cumin. 1/2 to 1 teaspoon cayenne pepper or hot paprika. Stir together. Makes the equivalent of a 1 1/4-ounce package of taco seasoning mix.

I fixed this for company and my own family for a Sunday after church everyone loved it!

This must be a repeat recipe because I have made this before - I found the cornbread on top a little too dumpling-like and too moist so I substituted polenta for lower sodium - and wow - really good.

this is so easy and GREAT!!! My teenager is so picky but loved this and went for thrids.. Gave it to my mom and my grandma,93 yrs old and she is picky as well could not get enough!!!!
