    Fresh vegetables are a great way to lighten up any meal. Our soft Italian Vegetables are seasoned as if you were on the streets of Italy, all you have to do is slice, season, and saute! This warm vegetable medley will be a great addition to any steak, chicken, or pasta dish.

    What You'll Need

    • 2 tablespoons olive oil
    • 1 red bell pepper, cut into 1-inch chunks
    • 1 green bell pepper, cut into 1-inch chunks
    • 1 yellow squash, cut into 1-inch chunks
    • 1 zucchini, cut into 1-inch chunks
    • 1 onion, cut into 1/2-inch chunks
    • 1 teaspoon chopped garlic
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 (14-1/2-ounce) can diced tomatoes, undrained
    • 1 teaspoon Italian seasoning
    • 1 tablespoon grated Parmesan cheese

    What to Do

    1. In a large skillet, heat oil over medium-high heat. Stir in red and green peppers, yellow squash, zucchini, onion, garlic, salt, and black pepper.
    2. Cook 6 to 8 minutes, or until vegetables begin to soften, stirring occasionally. Add tomatoes and Italian seasoning; mix well and cook on low heat 8 to 10 minutes, or until vegetables are tender, stirring occasionally. Sprinkle with Parmesan cheese, and serve.
