Mexican Corn Bread Salad is a colorful layered salad that tastes like a fiesta in a bowl. What You'll Need

  • 1 (1-ounce) package dry ranch-style dressing mix
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 6 corn bread muffins
  • 2 (16-ounce) cans pinto beans, rinsed and drained
  • 1 green bell pepper, chopped
  • 1 (16-ounce) package frozen corn, thawed
  • 3 large tomatoes, chopped
  • 10 slices bacon, cooked and crumbled
  • 2 cups (8 ounces) shredded Mexican cheese blend
  • 6 scallions, sliced

What to Do

  1. In a small bowl, combine dressing mix, sour cream, and mayonnaise; set aside.
  2. Crumble half the corn muffins into a large glass bowl or trifle dish. Place a layer of beans over corn muffins, then bell pepper, half of dressing mixture, corn, tomatoes, bacon, remaining corn muffins, remaining dressing mixture, cheese, and scallions.
  3. Cover and chill at least 2 hours before serving.

Simple Delicious (and filling!) we often just have this as a meal and it's perfect. I made it recently for company as a side dish for a fish fry everyone loved it. It's going to be a go-to for a long time to come.

This salad was such a hit at a Cinco de Mayo party last year, that several guests asked the host if I would bring it again this year. I have even jazzed it up with fiesta ranch seasoning, some chopped cilantro and black olives for a change.

I made this for our church homecoming & it was a big hit.

The clear glass bowl makes a spectacular presentation, but has anyone used a rectangular pyrex so it is easier to get some of each layer? If so, a 2 or 3 qt?

I have made this several time for different occasions and used a mexican cornbread mix and it was GREAT!!! My husband who is not a big "salad eater" will devour this.

A friend of mine gave me this recipe and I took it to a church fellowship last week. Big hit! Several people asked for the recipe, so am printing off 10 copies to take to church this week! Make sure you seed your tomatoes - my friend didn't and she said it looked a little messy.

I made it using 1 can of pinto beans and 1 can of black beans, both rinsed and drained. Everyone LOVED it!

I make this all the time. But I do 2 layers of each.

Yes, vclopeer, I also do 2 layers. And I love onions, so I put little rings of red or white onions in my layers & sprinkle the green ones on top. Love this!

Mix the pinto beans with home made salsa, before adding the bean layer. Also can use leftover mexican cornbread for an extra kick. It's yummy!

Right under the dressing, I added a layer of baby spinach & romaine lettuce. I made sure the greens were thoroughly dry before I layered them.

The first time I heard of cornbread salad, was at a potluck. One of the guys from Louisiana brought it. It sounded so unusual, I had to try it. "It was absolutely wonderful!" Finally, I found a recipe for it. Thanks!

I made this salad for a big (2 Day) family get together last weekend.It was such a hit that I had to turn around and make it again for the next day. When I told everyone where i got the recipe they couldn't quit saying OOH IT'S SO GOOD!
