Blue Cheese Bites

Whether served as a snack or as an appetizer, your tummies will be begging for more. The ingredients all blend together for a tasty combination that keep everyone lining up for more.
What You'll Need
- 2 (4-ounce) packages crumbled blue cheese
- 1/2 cup butter, softened
- 1 1/3 cup all-purpose flour
- 1/3 cup poppy seeds
- 1/4 teaspoon ground red pepper
- Walnut or pecan halves (optional)
What to Do
- Beat cheese and butter at medium speed of an electric beater until creamy. Add flour, poppy seeds, and red pepper; beat until blended.
- Divide dough in half; shape each portion into an 8" log. Wrap in wax paper, and chill 2 hours or until firm.
- Preheat the oven to 350 degrees. Cut each log into 1/4" slices; place on ungreased baking sheets. Press a walnut or pecan half in each slice, if desired. Bake 10 to 12 minutes or until golden. Cool 1 minute on pans; remove to wire racks to cool completely.
Notes
The cheese logs can be chilled overnight and sliced and baked the next day. You can also vary the preparation by omitting the chilling time and rolling the dough to 1/4" thickness. Using a 2" biscuit cutter or shaped cookie cutter, cut dough into rounds, and bake as directed.
