    French Pickled Mushrooms

    French Pickled Mushrooms looks and tastes fancy but doesn't require a lot of fancy work. The nice relish tang will really spark the taste buds.

    What You'll Need

    • 2 packages (12 ounces each) fresh mushrooms, stems trimmed
    • 2/3 cup tarragon vinegar
    • 1/2 cup vegetable oil
    • 2 garlic cloves, crushed
    • 1 tablespoon sugar
    • 1 1/2 teaspoon salt
    • 1 dash Dash fresh pepper
    • 2 tablespoons water
    • Dash hot pepper sauce
    • 1 small onion, chopped
    • 1 tablespoon chopped fresh parsley
    • 1 tablespoon dried tarragon

    What to Do

    1. In a large bowl, combine all ingredients, except mushrooms; mix well, then add mushrooms.

    2. Marinate overnight in the refrigerator, turning occasionally so that all of the mushrooms are soaked in the marinade.

    3. Store in a tightly covered container for up to 2 days.


    Notes

    Instead of tarragon vinegar, you can use cider vinegar combined with an additional tablespoon of dried tarragon. This recipe will probably serve 8 to 10 people as a party hors d'oeuvre. Just serve with toothpicks and watch the mushrooms disappear.

    I've been looking for some different not so commonly found appetizers and dips and this one looks unique. I see on the cooking shows all the time they pickle onions, cabbage, and other stuff really quickly even in 30 minutes, so it must be good because they don't want to lose in the competition. I've never had pickled mushrooms but I'm game!
