Filet Mignon with Horseradish Gravy

What You'll Need
- 1 (3/4-ounce) package brown gravy mix
- 2 tablespoons prepared horseradish
- 4 (5-ounce) beef tenderloin steaks
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 1 (8-ounce) package sliced fresh mushrooms
What to Do
- Preheat oven to 350 degrees F. Prepare gravy according to package directions; stir in horseradish. Set aside.
- Coat a large nonstick skillet with cooking spray. Place skillet over medium-high heat until hot; add steaks, and cook 1 minute on each side. (Steaks will be rare.) Place in a lightly greased 1-quart baking dish; sprinkle with salt and balck pepper.
- Melt butter in skillet over medium heat. Add mushrooms, and cook, stirring constantly, 5 minutes or until tender. Remove from heat; stir in gravy. Pour gravy over steaks; bake, uncovered, 15 minutes or to desired degree of doneness. Serve with mashed potatoes and steamed asparagus, if desired.
