Flank Steak with Tomato Olive Relish

Convenient canned tomatoes and briny black olives come together in a snap for this delicious relish. Over budget-friendly flank steak, this is sure to become a new favorite meal for your family.
What You'll Need
- 1 1/2 pound flank steak
- 3/4 teaspoon salt
- 3/4 teaspoon coarsely ground pepper
- 3 tablespoons olive oil
- 2 cloves garlic, thinly sliced
- 1/2 cup red wine or chicken broth
- 2 (14-1/2-ounce) can Italian-style diced tomatoes
- 1/2 cup pitted oil-cured black olives, chopped
- 1 tablespoon balsamic vinegar
- 3 tablespoons minced fresh parsley or 1 tablespoon dried parsley
What to Do
- Sprinkle flank steak evenly with salt and pepper. Heat oil in a large skillet over medium-high heat. Add steak, and cook 8 to 9 minutes on each side or to desired degree of doneness.
- Drain, reserving 1 tablespoon drippings in skillet; add garlic, and saut 1 minute. Add wine, tomatoes, olives, and vinegar; cook 10 minutes or until reduced by half. Stir in parsley.
- Cut steak diagonally across grain into thin slices, and serve with tomato relish.
Notes
This relish goes great with flank steak, but it'll compliment chicken or pork just as well.
