On those busy weeknights, you can reach for this recipe for Glazed Meatloaf Cakes. The tasty twist to this comforting main dish is in the special sauce that's drizzled over it!
What You'll Need
- 1 1/2 pound ground beef
- 1/2 cup chopped onion
- 4 slices raw bacon, chopped
- 3 tablespoons panko bread crumbs
- 2 teaspoons salt
- 2 teaspoons milk
- 1 tablespoon ricotta cheese
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon crushed red pepper
- 1 teaspoon dried oregano
- 1 egg
- 1/3 cup ketchup
- 1/4 cup brown sugar
What to Do
- Preheat oven to 375 degrees F. Coat a rimmed baking sheet with cooking spray.
- In a large bowl, combine all ingredients except ketchup and brown sugar; mix well. Form into 6 patties and place on prepared baking sheet.
- In a small bowl, mix ketchup and brown sugar; brush tops of patties with mixture.
- Bake 15 to 20 minutes or until no pink remains, or to desired doneness beyond that.

I've done a recipe similar to this in my cast iron pan. I believe it would work both ways. I prefer the stovetop especially when using cast iron.

The bacon cooks thru in that time frame????

Yes, if you chop the bacon into small pieces and cook the meatloaf cakes until they're well-done, the bacon will be cooked through. However, you can also pre-cook the bacon (or cook it entirely) before chopping and adding it to the meatloaf cakes. Enjoy!

Wait a minute, Test Kitchen! You say "until no pink remains." That is NO WAY cooked "until they're well-done" so, NO, the bacon doesn't cook done on the recipe time. But you say it does and then say "if cooked until they're well-done." Big difference!

What are panko bread crumbs? Can I use any kind of bread crumbs?

These are Japanese bread crumbs. They are found in the international food section at the grocery. Panko breadcrumbs will give a different texture. I will try it first as the recipe suggests,

Yss you can use regular bread crumbs Panko is Japenese bread crumbs a little bit lighter than our bread crumbs but your recipe will turn out just fine with either regular or Italian bread crumbs Panko just costs more than the other 2 ...Been cooking and baking for over 50 years
