Potato-Stuffed Meat Loaf

Meat loaf has always been a family favorite, but when it's stuffed with mashed potatoes, like this Potato-stuffed Meat Loaf, there's a double bonus in every bite.
What You'll Need
- 1 1/2 cup instant potato flakes
- 1 cup water
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 2 eggs
- 1 to 1-1/2 pounds ground beef
- 1 small onion, finely chopped
- 1 medium-sized green bell pepper, finely chopped
- 1 cup seasoned bread crumbs
- 3/4 cup milk
- 2 tablespoons steak sauce
What to Do

Preheat oven to 350 degrees F. Coat a 5- x 9-inch loaf pan with cooking spray.

In a medium-sized bowl, combine potato flakes, water, sour cream, salt, and 1 egg; mix well and set aside.

In another medium-sized bowl, combine remaining ingredients; mix well.

Pat half of meat mixture into prepared loaf pan. Press meat down and make a 1/2-inch indentation down middle length of loaf. Fill indentation with potato mixture. Gently top with remaining meat, pressing meat down over and around potato filling.

Bake 55 to 60 minutes or until juices run clear. Allow to set 5 minutes before slicing.

I made this for dinner last night. It was delish. I especially liked the potatoes inside. Didn't need to make potatoes separately. It was like an all in one dish. I just heated some frozen corn and some brown gravy and dinner was done. Great concept.

I made this last evening and it was so very good. I did jazz up the meatloaf mix with my own touches but the concept of potatoes inside was new for me. One tip, I tore off a piece of parchment paper and lined the loaf pan with it, keeping the long edges. My loaf pan has a lid and it fit well over the paper. About 10 mins before done, I pulled the loaf up by these edges and placed paper and meatloaf on a cookie sheet. It allowed the sides to get brown as I had a glaze on it and clean up was a snap.

Absolutely delicious. The only thing I changed was pouring brown gravy over the meatloaf prior to baking. Yum!

I'm sure it can be frozen,,, I like to wrap the loaf in bacon strips & mold it into a loaf, then place on a drip pan, thus it won't be sitting in it's own grease, you can also brush the top with a barbecue sauce,,, yummy. Let it sit a bit before slicing.
