This a different take on a classic family favorite. Most kids love sloppy Joe's, but mine get tired of them after a while. This would be a good way of reinventing them and making your kids feel like they are getting something different. Also, being made casserole style means it's perfect for pot licks and such because you can make a large batch at once.

I have been doing this with my sloppy Joe recipe for years. One fun variation that the kids liked, and now the grandkids, is pat the biscuits into muffin pans, fill with meat mixture, top with cheese and bake according to biscuit instructions. Can make a big batch and freeze. I also make these in mini muffin pans for parties.

Made this for dinner last night and it was delicious! Very simple and quick - I did cut down a little on the ground beef (to maybe one and a fourth lbs.). We had it with buttered corn and a green salad for a yummy and quick supper. Thanks for the recipe - it's a keeper!!
