Molasses Muffins

A Mr. Food viewer shared this recipe for Molasses Muffins. It's a Southern specialty that we know you're gonna love making for your bread basket and for bake sales.
What You'll Need
- 2 cups whole-wheat flour
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups buttermilk
- 1/2 cup molasses
- 1/2 cup raisins
What to Do
- Preheat oven to 250 degrees F. Coat 24 muffin cups with cooking spray (see Note).
- In a large bowl, combine both flours, the brown sugar, baking soda, and salt; mix well. Add buttermilk, molasses, and raisins; mix well. Spoon equally into prepared muffin cups.
- Bake 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Allow to cool slightly then remove to a wire rack to cool completely.
Note
To make cleanup easier, go ahead and use paper muffin cup liners in the muffin tin.

Thank you for your questions and comments. The recipe as you see it is correct, there are no eggs in this recipe and 250 degrees is the correct oven temperature. As far as the substituting all-purpose flour for wheat flour, you can try it, but we have not tried this in our Test Kitchen, so we can not guarantee the results. Thank you and enjoy!

I'm allergic to whole wheat flour, is it ok to use all purpose flour?

Is there supposed to be an egg in this recipe? The 250 degree temp may be correct because the baking time is a little longer than normal - 35 to 40 minutes.

Please only leave helpful comments AFTER you have actually tried the recipe. Examples; due to high altitude, adjustments in liquid/ flour ratio was necessary; needs seasoning; grease pan well. My family loved this, the cat, not so much.

I have not tried to make the muffins yet but they sound great and, in anticipation, I'm rating them very good. I'm wondering if the oven temperature should really be 250 or if that's a misprint. Thanks, Suzanne
