Cheddar Broccoli Casserole

Calling all vegetarians! This Cheddar Broccoli Casserole is for you. Without any meat, this casserole is both hearty and healthy at the same time.
What You'll Need
- 2 (10-ounce) packages frozen chopped broccoli, thawed and drained
- 1 (10-3/4-ounce) can cream of mushroom soup, undiluted
- 1 cup (4 ounces) shredded Cheddar cheese
- 1 cup mayonnaise
- 1/2 teaspoon garlic salt
- 2 large eggs, lightly beaten
- 1/2 cup herb-seasoned stuffing mix
- Paprika
What to Do
- Preheat oven to 350 degrees F. Combine first 6 ingredients in a lightly greased 7- x11- inch baking dish. Sprinkle with seasoned stuffing mix and paprika.
- Bake, uncovered, 30 minutes.
Notes
Get a jump-start on your meal by combining all the ingredients in this casserole except the stuffing mix and paprika the night before. Then cover and chill. The next day, sprinkle with stuffing mix and paprika and bake as directed.

Some very angry people. On another note, yes use some boneless chopped chicken. Make the meal an all in one dish by adding 1 cup rice cooked in 2 cups chicken broth. I cut the stuffing mix in half I don't need all the carbs.

I have made this casserole for 50 years. It is great and you can sub almost any cream soup you like. I don't use stuffing mix but usually crush crakers, cheese. plain whatever you have, mix with a little melted butter. It is a very easy receipe and always eaten.

You know ou can do anything with broccoli cheese! Adding the chicken sounds good and cream of celery and a little less mayo would be my suggestion. Yes, you are right "you can't fix stupid". Common sense should a pill you take every morning until you get some.

I have made this as a full meal in the past by adding chopped cooked chicken. I usually use cream of chicken soup also.

Sounds delicious, but the cream of mushroom soup, the Cheddar cheese and the cup of mayonnaise seems like these ingredients would put on some pounds. Might there be some way to lighten this food so that you are not putting on the pounds?
