Upside-Down Strawberry Cheesecake

This upside-down dessert is so good, you'll be doing flips after just one bite! This is a great dessert recipe for summer, since there's no baking involved and it calls for fresh strawberries. It's also light and creamy, which is just what we crave during the warmer months. We're telling you - you're going to love this Upside-Down Strawberry Cheesecake!
What You'll Need
- 1 cup (1/2 pint) heavy cream
- 1 (8-ounce) package cream cheese, softened
- 1 (4-serving size) package vanilla instant pudding and pie filling mix
- 1/2 cup milk
- 2 tablespoons sugar
- 1/2 teaspoon lemon juice
- 1 pint fresh strawberries, washed, hulled, and cut in half
- 4 graham crackers, crumbled
What to Do
- In a medium bowl, beat heavy cream until stiff peaks form; set aside.
- In a large bowl, beat cream cheese until creamy. Add pudding mix, milk, sugar, and lemon juice, and continue beating until smooth. Add whipped cream and fold until well blended.
- Place strawberry halves in a 9-inch pie plate. Spoon cream cheese mixture over them and top with crumbled graham cracker crumbs. Serve or cover and chill until ready to serve.

My kids and grandkids gave this 5 stars. While I am not really fond of strawberries, the topping is really light and refreshing, though a bit rich. I think I'll make the topping and serve it in individual portions with a big plump piece of fruit as decoration, as ripened,sweet strawberries are out of season in Michigan.

It will not be long before strawberries are plentiful and I will be need some recipes to use them. This is a different way to serve them with this upside down strawberry cheesecake recipe. Directions are showing 20 minutes to make this so this is one of those recipes I will save for later use.

Whoever does not love or at least like cheesecake just has not had the right version. This may be the one to ease you into it if you are not a fan. Easy recipe that I know will get a lot of rave reviews at my house.

My husband loves cheesecake. It is his favorite dessert of all time and it doesn't matter whether it's the no bake store bought kind or made from scratch. Either way, he will devour it. I will definitely be making this recipe, since it requires no baking, which makes it easier than my usual homemade recipe and it sounds way better than the other no bake kind.

I don't like regular cheesecake but I love this!! I make it all the time and it's the 1st dessert gone!! I usually make it the night before and put it in the freezer. I will get it out in the morning and put it in the frig to start thawing. By the time dessert rolls around that night it is thawed and keeps its shape.
