Almost-Fried Chicken

If you're staying away from a lot of "fried", here's an oven version that has fried taste without all the fat.
What You'll Need
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 teaspoon black pepper
- 1/2 teaspoon black paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 4 boneless, skinless chicken breast halves
- 1/4 cup olive oil
What to Do
- Preheat oven to 350 degrees F.
- Pour flour, cornmeal, pepper, paprika, garlic powder, and onion powder into a paper bag or shallow dish. Place chicken breasts in bag and shake until coated, or place in a shallow dish, turning to coat. Place coated chicken breasts in a baking pan and pour olive oil over them.
- Bake about 45 minutes, or until chicken is golden and no pink remains, turning several times.

I made up a similar recipe without the cornmeal. I use leg quarters, spray the pan and the top of the chicken with vegetable oil spray, (no evoo) and bake at 425 degrees for 1 hour. Nice crispy crust and by lining the pan with foil- no cleanup! My family loves it!

Very few people know that about the dishes they put on sites. If it doesn't show it, move on to another site. No need to give the dish a 1 star when you never even tried it. Pretty ignorant in my mind.

I think you missed the boat on this one. With 1/4 c. oil poured over the chicken I might as well fry it instead. Baking with that much oil for 4 breast halves will not cut down on the fat!

This recipe is healthy and delicious....used half the evoo and doubled the amount of spices......very easy...a keeper for sure!

sounds good. olive oil add is no good. use a spray bottle of oil or get a can of olive oil spray, use that and coat chicken all over, instead of spots.

try coating with mayo ( very lightly) & then coating with your fav combo of flour/c-meal etc .the mayo keeps it moist

Mr. Food, love this chicken and have been making it this way often. Very tasty and healthier than frying in a skillet with alot of oil. ah, yes! fried chicken without the work or oils. I am assuming you used Extra Virgin Olive Oil. That is heart healthy. I added some sodium free chicken seasoning to the flour mixture. My husband placed a slice of Gouda cheese on top of his. Gouda is an excellent cheese for the heart as well.

Try adding 2 Tablespoons of finely grated Parmesan or Pecorino Cheese to the cooking bag along with breadcrumbs instead of the flours - absolutely yummy!

I HAVE MADE THIS WITH CHICKEN THIGHS AND CHICKEN LEGS AND IT IS VERY GOOD,I HAVE MADE IT 3 TIMES AND OH SO GOOD AS MR FOOD ALWAYS SAYS TRY IT IS GOOD AND SO EASY...
